Banana Oat Bread Pudding

Adapted from's Banana Oat Bread Pudding <---- Original recipe here

Blingaholic's Adaptation:


* 5 slices whole wheat bread
* 1 cup rolled oats
* 2 1/2 cups lowfat milk
* 1/4 cup unsweetened applesauce
* 1 tsp ground cinnamon
* 1 tsp vanilla extract
* 2 ripe bananas, sliced (more bananas if you like LOTS of banana flavor)
* 1 cup condensed milk (add more if you want it sweeter)
* 1/4 cup raisins (optional)
* 1 cup chopped walnuts
* 1 cup of Eggbeaters (equiv. 2 large eggs, beaten)


1. In a large bowl, break bread into small pieces. Add oats and milk; stir. Let stand for 30 minutes.
2. Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 inch baking pan.
3. To the milk mixture add: applesauce, cinnamon, vanilla extract, bananas, condensed milk, raisins, and walnuts. Stir just to combine and pour into prepared pan.
4. Bake for 45-55 minutes, or until pudding has set. Cool before serving.

It was SO good!!! When it was first out of the oven, I served it with a scoop of low-fat vanilla frozen yogurt and DH loved it.

i finally got fed up with all the ripe bananas i had. i can only drink so many banana milkshakes in a day

Good grief, if I don't get a job soon, I am going to gain 100 pounds. That looks sooooo good, Bling, and you just had to mention frozen vanilla yogurt...

awww, darling, i hope you get something soon! in the mean time...this banana bread pudding is pretty healthy, having rolled oats and whole wheat bread.
